Healthy food is a very important item in a time of enormous pollution, both of food, water and air, which directly affects human health and lifespan.
International recognition, the proclamation of Montenegro as the first "Ecological State" in the world, and Žabljak as its capital, is further proof that the traditional cuisine of this area is distinctive and unique in the world.
That it really is so is confirmed by the vast, primeval, divine surfaces covered with lush pastures, rich in diverse medicinal flora, numerous lakes, forests, springs, which is pure proof of a healthy environment. Livestock are also grazed in such an environment, from whose milk and meat the far-famed specialties of this region are later prepared.
The "Institute for the Application of Nuclear Energy" from Belgrade conducted a radiological contamination test of food in 1993. Exactly 100 samples were taken: food of animal origin, food of plant origin and animal feed. The results showed that there is no area in the world with a lower dose of radioactivity than the Durmitor area.

Some of the ingredients of traditional Durmitor recipes come directly from nature: several types of mushrooms, forest fruits, medicinal herbs and edible wild plants.

The vegetables and grains used as food ingredients in our restaurant are produced in the vegetable gardens and fields of our neighbors on Durmitor.

Our bakery is located in Žabljak, from which we receive bread and other bakery products every day: pies, rolls, pastries and sweets.

Our cows spend summers in mountain meadows...
Of the dairy products, the most represented are; buttercream (sheep's and cow's), full-fat cheese (several types), žetica, urda, buča, sour milk, surutka, grušavina, butter, jomuža.
Honey
Ingredient of numerous delicacies or base for mead
Durmitor honey can rightfully bear the label of an organic product due to the completely clean environment in which it is collected. No artificial fertilizers are used in the meadows, no artificial preservatives are used on the fruit, and the overall environment is such that there is no need to use medicines to protect bees from diseases to which they are more susceptible in most regions.
